This is a split New York steak, known in the foodservice industry as California cut. Due to the naturally large striploin, these steaks are split in half to maintain the proper steak thickness, ensuring even cooking and consistent results.

A5 is the highest grade awarded to Japanese Wagyu, known for its unparalleled marbling, tenderness, and buttery flavour that melts in your mouth. These steaks are typically shared, but some have been known to enjoy an entire steak on their own.
